This course focuses on water skills for children ages 3 to 5 that are ready to swim on their own! Students will build on their water skills and grow their independence. Promoting water safety from a young age will help to keep your child safe as they become more self-confident and believe in their abilities. Skills taught: Enter & Exit water from side Blow bubbles with nose (humming) Bobbing Front float for 3+ seconds Back float for 3+ seconds Jelly fish float for 3+ seconds Roll from back to front Roll from front to back Front glide (one body length) Back glide (one body length) “Scooping” and kicking on front 5 feet Flutter kicking on back 5 feet Elementary backstroke arms 5 feet (w/ support) Swim, Float, Swim 10 feet (w/ support) Jump in (w/ support) Follows Directions Water Safety Skills Note: Students who are still working on potty training MUST wear appropriate swim diapers and plastic covers. Students will be turned away if not wearing the appropriate swim diapers/covers.Parents MUST remain in the building during lessons and should stay within eyesight of the pool for quick contact if needed.

A Tex Mex Fiesta

We'll begin with "Empanadas ", pastries filled with beef, tomatoes, potatoes and herbs. Flautas are next with chicken in a jalapeno/garlic paste and fried crisp in a corn tortillas. We'll then prepare authentic Mexican rice prepared with onions, garlic, tomatoes and fresh cilantro along with Mexican style corn prepared with lime aioli, cayenne pepper and Cotija cheese. Fajitas follow with tender strips of marinated beef and chicken with fresh sauteed bell peppers and onions wrapped in a warm tortilla shell. We’ll finish this fiesta with a Yucatecan-style delight, fresh coconut blended with rich custard in a wonderful nutty crust, baked to a caramelly brown, and served with crème fraȋche. Using an Air Fryer to cook vegetables is quick—and the healthy results are delicious! In this live online class Kirsten will demonstrate a variety of recipes using in-season local and/or commonly available vegetables including Lemon Pepper Broccoli, Miso Sesame Kale Chips, and Roasted Sweet Potatoes. Participants will receive an extensive handout along with the link to join prior to class. Chicken Marsala vs. Chicken Limone (Participation Class)

Begins with bruschetta topped with fresh mozzarella cheese, skinned roma tomatoes and sweet roasted bell pepper sprinkled with fresh basil and drizzled with olive oil. You’ll prepare “Chicken Marsala” with fresh sauteed mushrooms in a sweet Marsala butter sauce. We’ll see how that measures up against “Chicken Limone” topped with a chardonney, lemon, butter sauce with capers. Both entrees are paired with "Spaghetti Aglio Olio", tender garden vegetables tossed with olive oil, garlic, and Romano cheese. We'll finish with "Diplomatico", a divine combination of rum and espresso-soaked pound cake, rich chocolate mouse and fresh whipped cream. Ethiopian/Eritrean food is light, healthy and flavorful. It can range from a little spicy to very mild, and from meat to vegetarian- friendly. Originating in the 18th century, Swiss chefs transformed hardened cheese and bread into a delicious dish by melting cheese with wine and pairing it with bread cubes. The term "fondue" comes from the French word "fondre," meaning "to melt." In this class, we’ll explore a variety of fondues from around the globe, including Traditional Cheese, Classic Swiss, Beef Bourguignonne, Crab, Bleu Cheese, and Tempura. We won’t stop there—indulge your sweet tooth with dessert fondues like flavored chocolate and butterscotch, complete with tasty treats like fruit, cake, and brownies for dipping. Oh, You Beautiful Cake!

What could be better than chocolate, caramel, pecans, and more? In this class, you will mix, bake, and assemble a decadent 3-layer cake. With guidance from Nancy, each student will create and take home a deliciously gooey chocolate masterpiece, perfect for sharing with family and friends—if you can resist keeping it all for yourself! Phyllo Perfection: Appetizers, Mains, and Desserts

Did you know phyllo pastry can transform your cooking? Say goodbye to your fear of this delicate, paper-thin dough! In this class, we’ll explore a variety of appetizers, main dishes, and desserts made with phyllo. We'll kick things off with "phyllo kisses," a quick and easy 5-minute appetizer. Next, we'll create delicious, flaky feta cheese triangles that are perfect for entertaining—prepare them in advance and freeze until your guests arrive! For the main course, we’ll roll chicken and fresh vegetables, like broccoli in a creamy cheese sauce, in this golden, crispy pastry. And, of course, no phyllo class would be complete without baklava—loaded with nuts and drenched in sweet honey syrup. Tantalizing Thai Cuisine (Participation Class)

You’ll begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. Enjoy Traditional Italian favorites beginning with classic panzanella, a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You’ll prepare the celebrated chicken saltimbocca using thin slice prosciutto ham and fresh sage topped with a lemon caper butter sauce and pan-fried artichokes. You learn the art of potato gnocchi, shaped potato dumpling, tossed with a medley of amazing sauces including fresh basil pesto, marinara, and brown butter with sage We’ll finish with canolli, fried pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of warm chocolate sauce and garnished with chopped pistachios. Traditional Southern Cooking

Beginning in the 1960's, food in the U.S. deep south was heavily influenced by early settlers from France, Germany, and Spain. Slaves from Senegal, Africa, and Cuban refugees and Cajuns from Nova Scotia, Canada also contributed to the medley of flavors using the wealth of local seafood, vegetables, poultry, livestock and of course, pecans. Join us in a memorable meal to include crab dip, traditional cheese straws, gumbo, jambalaya, red beans and rice, buttermilk biscuits, cheese grits, pecan praline candy and traditional bread pudding with bourbon sauce. Truffles: Candies for all Occasions

Just in time for Valentine's Day! although they can be made any time of the year. These rich, chocolaty delicacies make wonderful gifts... if you can part with them that is. We will make five different kinds of truffles and dip or decorate them with beautiful trim. Each student will go home with a nice box of finished truffles. Supply Fee of $13 per student payable to the instructor in class. Optional truffle/candy kit will be available for purchase for future candy making projects. We are sorry, but we cannot accommodate nut allergies in this class.
