Air Fryer Veggies (Online Class)

Using an Air Fryer to cook vegetables is quick—and the healthy results are delicious! In this live online class Kirsten will demonstrate a variety of recipes using in-season local and/or commonly available vegetables including Lemon Pepper Broccoli, Miso Sesame Kale Chips, and Roasted Sweet Potato Sticks. Participants will receive an extensive handout along with the link to join prior to class. There will be ample time for questions during the session, and participants will receive a link to the recording afterwards so you can cook along at your convenience. Savor the flavors of Brazil with Chef Mimi's Coconut Chicken with steamed veggie or rice recipe! French Dinner

Send your taste buds on a trip to romantic France! During this hands-on class, you will prepare a course French dinner that will be sure to impress. Provence, the regional home to Marseille, Nice and the Riviera, often bases its cuisine on garlic, olive oil, tomatoes, saffron, and herbs. Experience vichyssoise, potato galettes, saffron rice, coquilles St. Jaques a la Provencale and créme caramel. You will also learn something of the history and culture of the French Provence region. In this fun-filled and hands-on class, you will be guided step-by-step by your instructor Mimi in recreating this classic known for its diverse flavor profile of sweet, salty, sour and spicy on to properly prepare and build the flavor profile of an authentic Pad Thai sauce. Hand-Pulled Noodles from Scratch (Online Class)

Hand-pulled noodles are so much fun and they are much easier to make than you would think. In this online interactive class, you will learn 2 different techniques to pull noodles. We will make 2 types of hand-pulled noodles: Biang Biang and Lamian noodles. We’ll turn Biang Biang noodles into a noodle salad with chili sauce. We’ll turn Lamian noodles into miso noodle soup. Korean Street Food: Chicken Bulgogi Bibimbap (Online Class)

Homestyle Korean cooking is full of vegetables. You can also adjust the heat level at home. In this online interactive class, we will make popular delicious chicken bulgogi bibimbap, a rice bowl with chicken bulgogi, seasoned spinach, cucumber salad, kimchi, egg, and delicious sauce. Le Magnifique Macaron Cake

Experience the newest twist on the beloved macaron – an impressive macaron cake crafted from layers of oversized macarons and rich fillings, decorated with traditional macarons. This class is open to everyone, whether or not you have previously participated in Nancy’s macaron classes. You will mix, bake, and assemble your own visually stunning macaron cake, sure to dazzle on any occasion. All necessary supplies are provided. Join us for an evening mixing, baking, and decorating your own charming 8-inch cake to take home and share with family, friends or co-workers. No prior decorating experience is required, and everything will be provided for you; you'll see that great results don't always need special tools. Scones

Traditionally Scottish scones are a delectable quick bread that comes in assorted shapes. Enjoy a variety of easy scone recipes including Lemon Cream Scones and the traditional Currant Scone. We will taste wonderful lemon curd and traditional Devonshire cream or whipped cream for tea as we try our scones warm out of the oven. We will also make a White Chocolate Spread for our creations. Summer Skewer Snacks (Online Class)

Food on a stick isn’t just for the Fair! Join Kirsten live online to move beyond the basic Caprese Skewers into a world of color, flavor, and possibilities. Kirsten will share the 3 Rules of Skewering and demonstrate multiple methods to pleasingly present your offerings. From vegan to omnivore there are recipes for everyone. Tantalizing Thai Cuisine (Participation Class)

You’ll begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. For dessert, Thai lime custard topped with fresh whipped cream. Please note: this class is non-refundable in the event of weather cancellations. Traditional Italian Cuisine (Participation Class)

Enjoy Traditional Italian favorites beginning with classic panzanella, a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You’ll prepare the celebrated chicken saltimbocca using thin slice prosciutto ham and fresh sage topped with a lemon caper butter sauce and pan-fried artichokes. You learn the art of potato gnocchi, shaped potato dumpling, tossed with a medley of amazing sauces including fresh basil pesto, marinara, and brown butter with sage We’ll finish with canolli, fried pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of warm chocolate sauce and garnished with chopped pistachios. What's Eating Your Plant? (Online Class)

This class is designed to help home gardeners learn how to prevent against, diagnose, and respond to problems in your yard and garden using Integrated Pest Management practices. This class is offered by the U of M Extension Master Gardener volunteers of Ramsey County, who are eager to share research-based gardening best practices with the people in their community.
